RECIPE No. 12 - MUSHY MINT PEAS

Ingredients
 
2 tablespoons of Olive Oil
1 bunch of Spring Onions (chopped)
1 handful fresh Mint leaves
500grams (1 pound) of frozen Peas
2 large chunks of Butter
Sea Salt and freshly ground Black Pepper
 
Method
 
Heat the oil in a pan and add the chopped Spring onions, Mint and Peas. Cover and leave for a few minutes (to steam). Mash with a potato masher (alternatively pulse in a food processor until smooth). When done add the Butter and season very carefully to taste.
